Ingredients

  • 1 cup ketchup
  • 1 cup white vinegar
  • ¼ cup granulated sugar
  • ½ teaspoon ground mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chilli powder
  • 1 teaspoon salt
  • ¼ cup water
  • ½ teaspoon black pepper
  • ¼ teaspoon white pepper
  • ¼ teaspoon red pepper flakes or cayenne pepper
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce

Equipment

  • Medium saucepan
  • Whisk or spoon
  • Measuring cups and spoons
  • Airtight container or jar (for storage)

Method

  1. In a medium saucepan, whisk together the ketchup, vinegar, sugar, honey, and water over medium heat.
  2. Stir in the garlic powder, onion powder, ground mustard, smoked paprika, chilli powder, salt, black pepper, white pepper, red pepper, and Worcestershire sauce.
  3. Bring the mixture to a gentle simmer over medium heat. Reduce heat to low and let it cook for about 10–15 minutes, stirring occasionally to prevent burning.
  4. Taste the sauce and adjust seasoning if needed more vinegar for tangibleness, honey for sweetness, or cayenne for heat.
  5. Remove from heat and let the sauce cool. Transfer to an airtight jar or container and refrigerate. The flavours deepen over time best after 24 hours!

Notes

I like this sauce with a gentle kick. Increase or decrease cayenne pepper to match your taste. For more tang, swap in white vinegar for a tangier vinegar punch Snap Calorie If I want more Mamie, sometimes I add a splash of liquid smoke or a dash more Worcestershire.
This sauce tastes even better after sitting overnight. Seasoning blends and warmth subsides into a more cohesive flavour.
