Ingredients
  

For The Cake:

  • cups all purpose flour
  • 1 cup organic cane sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsweetened plant-based milk
  • ½ cup neutral oil canola or sunflower
  • 1 tablespoon white vinegar
  • 2 teaspoons vanilla extract
  • ¾ cup hot brewed coffee or hot water
  • ½ cup vegan butter softened
  • 2 vegan eggs

For The Vegan Chocolate Butter Cream Frosting:

  • ½ cup unsalted vegan butter
  • teaspoon salt
  • 2 cups powdered sugar
  • 3 tablespoons Dutch process cocoa powder sifted
  • teaspoons vanilla extract
  • 3 –5 teaspoons unsweetened dairy free milk

Instructions
 

Step 1, Start By Getting The Oven Ready

  • Preheat it to 350°F (175°C). Grease two 8-inch round cake pans, line the bottoms with parchment paper, and lightly dust the sides with flour so the cakes don’t stick.

Step 2, Mix The Dry Ingredients

  • In a big bowl, sift together the flour, cocoa powder, baking soda, and salt. Stir in the sugar until everything is evenly combined.

Step 3, Whisk The Wet Ingredients

  • In another bowl, combine the plant based milk, oil, vinegar, vanilla, and hot coffee. Make sure it’s smooth and well blended.

Step 4, Bring It All Together

  • Pour the wet mixture into the dry ingredients and gently stir until just combined. Fold in the softened vegan butter and vegan eggs, taking care not to over mix the batter should stay light and airy.

Step 5, Bake Your Cakes

  • Divide the batter evenly between the two pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes sit in the pans for about 10 minutes before transferring them to a cooling rack.

Step 6, Make The Frosting

  • Beat the vegan butter with a pinch of salt until creamy. Gradually add powdered sugar and cocoa powder, then mix in vanilla and 3–5 teaspoons of dairy free milk until the frosting is smooth and spreadable.

Step 7, Assemble And Enjoy

  • Once the cakes are completely cool, spread frosting on one layer, place the second cake on top, and cover the top and sides with the remaining frosting. Decorate however you like and serve.
