Vegan Berry Baby Bundt Cake Recipe is a small, plant based cake made with flour, sugar, plant milk, vegan butter, and mixed berries moist, fruity, and naturally dairy and egg free. I made this Vegan Berry Baby Bundt Cake Recipe because I wanted to recreate a childhood memory of sweet berry cakes in a healthier, vegan way.

Ingredients
  

  • 1 ½ cups all purpose flour
  • ¾ cup organic sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • cup plant based milk soy, almond, oat, etc.
  • cup neutral oil sunflower or canola
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • Zest and juice of ½ lemon or ½ orange
  • cup vegan butter melted and cooled
  • 1 cup mixed berries blueberries, raspberries, or chopped strawberries

Instructions
 

Step 1: Prepare The Pan

  • Preheat the oven to 350°F (175°C). Lightly grease the baby bundt cake pan with vegan butter or oil, then dust with flour, or coat evenly with a non stick spray.

Step 2: Mix The Dry Ingredients

  • In a large mixing bowl, sift together the all purpose flour, sugar, baking powder, baking soda, and salt. If using, stir in the lemon or orange zest.

Step 3: Mix The Wet Ingredients

  • In a separate bowl, whisk the plant milk, apple cider vinegar, vanilla extract, melted vegan butter, oil, and lemon or orange juice. Let the mixture rest for 1–2 minutes until it slightly curdles.

Step 4: Bring Everything Together

  • Slowly add the wet ingredients to the dry ingredients, folding gently with a spatula until just combined. Mix only until no dry spots remain.

Step 5: Add The Berries

  • Carefully fold in the mixed berries, saving a few for the top if desired. Spoon the batter evenly into the prepared bundt pan.

Step 6: Bake And Cool

  • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes, then turn it out onto a cooling rack. Serve warm or once fully cooled.
