Vegan Berry Baby Bundt Cake Recipe is a small, plant based cake made with flour, sugar, plant milk, vegan butter, and mixed berries moist, fruity, and naturally dairy and egg free. - ¾ cup organic sugar
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ⅔ cup plant based milk soy, almond, oat, etc.
- ⅓ cup neutral oil sunflower or canola
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- Zest and juice of ½ lemon or ½ orange
- ⅓ cup vegan butter melted and cooled
- 1 cup mixed berries blueberries, raspberries, or chopped strawberries
Step 2: Mix The Dry Ingredients
In a large mixing bowl, sift together the all purpose flour, sugar, baking powder, baking soda, and salt. If using, stir in the lemon or orange zest.
Step 3: Mix The Wet Ingredients
In a separate bowl, whisk the plant milk, apple cider vinegar, vanilla extract, melted vegan butter, oil, and lemon or orange juice. Let the mixture rest for 1–2 minutes until it slightly curdles.

Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes, then turn it out onto a cooling rack. Serve warm or once fully cooled.
