Triple Berry Cake Recipe is a soft, fruity layer cake filled with fresh berries and rich cream cheese frosting, created to celebrate bright flavors in a homemade way. I made this recipe because my old experience baking berry cakes always brought joy, and I remembered watching this style of cake being prepared years ago, inspiring me to recreate it in my own kitchen.
Heat the oven to 350°F (175°C). Lightly grease three 8-inch cake pans and line the bottoms with parchment. In a medium bowl, whisk the flour, baking powder, and salt together and set aside.
Step 2 — Beat The Butter And Sugar
In a large bowl, whip the softened butter with the sugar until the mixture looks pale and airy. Add the vanilla, then mix in the eggs one at a time, blending well after each addition.
Step 3 — Bring Everything Together
Add the dry ingredients to the butter mixture in a few additions, alternating with the milk. Stir in the lemon zest, then gently fold in the berries. Don’t over mix stop as soon as everything is combined.
Step 4 — Bake The Layers
Divide the batter evenly among the three pans. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Cool the cakes completely on a rack.
Step 5 — Make The Frosting
Whip the heavy cream on medium high speed until soft peaks form, about 2 minutes. Add the cream cheese, softened butter, powdered sugar, vanilla, and a pinch of salt. Beat until smooth and fluffy.
Step 6 — Build The Cake
Place the first cooled layer on a serving plate. Spread about ½ cup of frosting over the top and sprinkle on a handful of sliced berries. Repeat with the second layer.
Step 7 — Finish And Decorate
Set the final layer on top and cover the whole cake with the remaining frosting. Toss the extra berries with a little sugar and lemon juice, then spoon them over the top. Slice and enjoy.
