Ingredients
  

  • 2 cups cake flour
  • 1 cup sugar
  • ¼ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup cold water
  • cup vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup shortening
  • 3 large eggs
  • ½ cup pureed tomatoes
  • Chocolate butter cream and fresh strawberries

Instructions
 

Step – 1 Prepare The Pan And Oven

  • Set the oven to 175°C (350°F). Grease a 9-inch cake pan and dust lightly with flour, or line the bottom with parchment paper.

Step – 2 Mix The Dry Ingredients

  • In a large mixing bowl, sift together the cake flour, cocoa powder, baking soda, and salt. Add the sugar and mix well.

Step – 3 Mix The Wet Ingredients

  • In another bowl, combine the cold water, vegetable oil, white vinegar, and vanilla. Stir in the pureed tomatoes and whisk until completely smooth.

Step – 4 Add Shortening And Egg Yolks

  • Beat the shortening until soft and creamy. Separate the eggs, then add the yolks to the shortening and beat until light in colour. Gradually mix in the wet ingredients until well combined.

Step – 5 Fold In Egg Whites

  • In a clean bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter, being careful not to deflate the mixture.

Step – 6 Bake And Finish

  • Pour the batter into the prepared pan. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool on a wire rack. Once cooled, frost with chocolate buttercream and top with fresh strawberries before serving.
