Thunder Cake Recipe is a unique and moist chocolate cake that uses ingredients like pureed tomatoes, eggs, cocoa powder, and vegetable oil to create a rich, tender texture. The main specialty of this cake is its incredible moisture and lightness despite being dense, thanks to the whipped egg whites and the addition of tomatoes, which naturally enhance softness.
Set the oven to 175°C (350°F). Grease a 9-inch cake pan and dust lightly with flour, or line the bottom with parchment paper.
Step – 2 Mix The Dry Ingredients
In a large mixing bowl, sift together the cake flour, cocoa powder, baking soda, and salt. Add the sugar and mix well.

In a clean bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter, being careful not to deflate the mixture.
Step – 6 Bake And Finish
Pour the batter into the prepared pan. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool on a wire rack. Once cooled, frost with chocolate buttercream and top with fresh strawberries before serving.
