- Taste the sauce and adjust salt or spice levels as desired. Let the sauce cool before using.
Notes
I recommend using a good-quality blanco or reposado tequila because it adds a nice flavor without overpowering the sauce.
Avoid cheaper brands that can taste harsh. If you want a thinner sauce, add a splash of water or more tequila during simmering.
For those who love heat, add a diced jalapeno during the saute step or some chipolata powder with the spices. Ensure Worcestershire sauce is vegan or substitute with soy sauce or tamarind for a similar Mamie boost.
