Ingredients
  

  • 1 cup ketchup
  • 1/2 cup 1800 Silver Tequila
  • 1/2 cup brown sugar
  • 1/4 cup white vinegar
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1 tablespoon lime juice
  • 1 small onion finely chopped
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil

Equipment

Method
 

  1. Stir in the ketchup, brown sugar, white vinegar, Worcestershire sauce, garlic powder, dry mustard, paprika, chili powder, ground cumin, black pepper, and salt.
  2. Mix well. Pour in the tequila and lime juice, stirring to combine all ingredients smoothly. Bring the sauce to a gentle simmer.
  3. Reduce heat to low and cook, stirring occasionally, for 10-12 minutes or until the sauce thickens slightly and the flavour meld together.
  4. Taste the sauce and adjust salt or spice levels as desired. Let the sauce cool before using.

Notes

I recommend using a good-quality blanco or reposado tequila because it adds a nice flavor without overpowering the sauce.
Avoid cheaper brands that can taste harsh. If you want a thinner sauce, add a splash of water or more tequila during simmering.
For those who love heat, add a diced jalapeno during the saute step or some chipolata powder with the spices. Ensure Worcestershire sauce is vegan or substitute with soy sauce or tamarind for a similar Mamie boost.
