Equipment

  • Medium saucepan
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Knife and cutting board
  • Small bowl (optional, for lime juice)

Ingredients

  • 1 cup ketchup
  • 1/2 cup 1800 Silver Tequila
  • 1/2 cup brown sugar
  • 1/4 cup white vinegar
  • 3/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1 tablespoon lime juice
  • 1 small onion finely chopped
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  • Stir in the ketchup, brown sugar, white vinegar, Worcestershire sauce, garlic powder, dry mustard, paprika, chili powder, ground cumin, black pepper, and salt.
  • Mix well. Pour in the tequila and lime juice, stirring to combine all ingredients smoothly. Bring the sauce to a gentle simmer.
  • Reduce heat to low and cook, stirring occasionally, for 10-12 minutes or until the sauce thickens slightly and the flavour meld together.
  • Taste the sauce and adjust salt or spice levels as desired. Let the sauce cool before using.

Notes

I recommend using a good-quality blanco or reposado tequila because it adds a nice flavor without overpowering the sauce.
Avoid cheaper brands that can taste harsh. If you want a thinner sauce, add a splash of water or more tequila during simmering.
For those who love heat, add a diced jalapeno during the saute step or some chipolata powder with the spices. Ensure Worcestershire sauce is vegan or substitute with soy sauce or tamarind for a similar Mamie boost.
