- In a medium saucepan, combine ketchup, brown sugar, white sugar, sweet chili sauce, both vinegars (apple cider and rice), water, Worcestershire sauce, soy sauce, garlic, ground ginger, smoked paprika, and red pepper flakes.
- Place the saucepan over medium heat. Stir continuously with a wooden spoon or spatula to ensure the sugars dissolve and the mixture is smooth.
- Once the sauce begins to bubble lightly, reduce the heat to low. Let it simmer gently for 10–15 minutes, stirring occasionally. The sauce will thicken slightly as it cooks. Remove from heat and let it cool completely.
Notes
Keeps well in a clean, sealed jar in the fridge for up to 3 weeks. Simmer a few minutes longer if you want a thicker glaze.
Use tamari and omit Worcestershire (or use GF version). Add more red pepper flakes or a dash of cayenne. Replace brown sugar with honey or maple syrup, and reduce quantity.
