Instructions
Step 1: Get The Rice Ready
In a medium bowl, mix the cooked sushi rice with rice vinegar, sugar, salt, sesame oil, and soy sauce. Set it aside to cool slightly while you prep the other ingredients.
Step 2: Make The Spicy Layer
In a small bowl, combine sriracha, spicy mayo, and chopped scallions. This will go between the rice layers in the bundt pan.
Step 3: Whip Up The Citrus Tamari Sauce
In another bowl, stir together tamari, orange juice, and lemon juice. Taste and tweak if needed. This sauce will be drizzled over the finished sushi cake.
Step 4: Prep The Bundt Pan
Lightly coat your bundt pan with cooking spray or a thin layer of oil. Spread half of the rice evenly in the bottom and press it down gently. Layer on sliced cucumber, avocado, cilantro, and the spicy mixture. Finish with the remaining rice and press firmly so everything holds together.
Step 5: Chill And Unmold
Pop the pan in the fridge for 10–15 minutes to let the layers set. When ready, carefully flip the bundt pan onto a serving plate.
Step 6: Garnish And Serve
Sprinkle the top with shichimi togarashi, toasted nori, and finely chopped serrano. Drizzle with the citrus tamari sauce (and extra tamari if you like). Slice it like a cake and enjoy immediately.
