- 1.5 pounds baby bella or white mushrooms cleaned and stems removed
- 2 tablespoons unsalted butter
- 1 small yellow onion or shallot finely minced
- ¼ cup freshly grated Parmesan cheese
- 1 tablespoon fresh parsley finely chopped
- Salt and freshly ground black pepper to taste
- 4 oz cream cheese softened to room temperature
- 1 tablespoon fresh thyme leaves chopped
- 2 –3 cloves garlic finely minced
- ¼ cup panko breadcrumbs or regular breadcrumbs as alternative
Clean And Prep The Mushrooms:
Cook The Filling Base:
Heat some butter in a pan over medium heat. Toss in the chopped stems, along with some minced onion or shallot and garlic. Cook everything for about 5 to 7 minutes, until it’s soft and smells amazing. Take it off the heat and let it cool a bit.
Mix The Filling:
In a bowl, combine the cooked mushroom mixture with softened cream cheese, panko breadcrumbs, Parmesan cheese, thyme, parsley, paprika, salt, and pepper. Stir everything together until it’s well mixed.
