Ingredients
  

  • 1.5 pounds baby bella or white mushrooms cleaned and stems removed
  • 2 tablespoons unsalted butter
  • 1 small yellow onion or shallot finely minced
  • ¼ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley finely chopped
  • Salt and freshly ground black pepper to taste
  • 4 oz cream cheese softened to room temperature
  • 1 tablespoon fresh thyme leaves chopped
  • 2 –3 cloves garlic finely minced
  • ¼ cup panko breadcrumbs or regular breadcrumbs as alternative

Instructions
 

Get Your Oven Ready:

  • Set it to 375°F (190°C) so it’s nice and hot when the mushrooms go in.

Clean And Prep The Mushrooms:

  • Wipe the mushrooms gently with a damp paper towel to get rid of any dirt. Take out the stems and chop them up finely, then keep the caps separate for stuffing.

Cook The Filling Base:

  • Heat some butter in a pan over medium heat. Toss in the chopped stems, along with some minced onion or shallot and garlic. Cook everything for about 5 to 7 minutes, until it’s soft and smells amazing. Take it off the heat and let it cool a bit.

Mix The Filling:

  • In a bowl, combine the cooked mushroom mixture with softened cream cheese, panko breadcrumbs, Parmesan cheese, thyme, parsley, paprika, salt, and pepper. Stir everything together until it’s well mixed.

Fill The Mushrooms:

  • Spoon the mixture generously into each mushroom cap don’t be shy!

Bake:

  • Place the stuffed mushrooms on a baking sheet lined with parchment paper or greased lightly. Pop them in the oven and bake for 18 to 20 minutes, until the mushrooms are tender and the tops turn a lovely golden brown.

Finish And Serve:

  • Sprinkle some fresh parsley on top and serve them warm. Enjoy!

Notes

If you want a vegetarian version, skip the bacon and add extra herbs like thyme or oregano for a flavour boost.
