Ingredients
  

White Cake Base

  • 1 ½ cups all purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • ½ cup buttermilk
  • 1 tsp vanilla extract
  • ½ cup melted white chocolate
  • 1 cup fresh strawberries chopped and lightly mashed

White Chocolate Strawberry Frosting

  • 6 oz white chocolate chopped
  • 1 cup unsalted butter softened
  • 2 ½ cups powdered sugar
  • 1 Tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • tsp salt
  • 2 –4 Tbsp strawberry puree

Strawberry Filling

  • 3 cups fresh strawberries hulled and chopped
  • ½ cup granulated sugar
  • 1 Tbsp lemon juice
  • 2 ½ Tbsp cornstarch

Instructions
 

Make The Strawberry Filling

  • Put the strawberries, sugar, lemon juice, and cornstarch into a small pot. Warm over medium heat, stirring often, until the mixture thickens (about 6–8 minutes). Set it aside to cool completely. Scoop out 2–4 tablespoons of the cooled mixture for the frosting later.

Mix The White Cake Batter

  • Heat the oven to 350°F (175°C). Line two 8-inch cake pans with parchment paper. In one bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, beat the butter and sugar until fluffy. Add the eggs one at a time, then mix in the vanilla. Add the dry ingredients in a couple of additions, alternating with the buttermilk. Stir in the melted white chocolate, followed by the mashed strawberries.

Bake The Cake Layers

  • Divide the batter between the two pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then move them to a rack to finish cooling.

Make The White Chocolate Strawberry Frosting

  • Melt the white chocolate and let it cool slightly. Beat the butter until smooth, then slowly mix in the powdered sugar. Add the vanilla, salt, and heavy cream, followed by the melted white chocolate. Blend in 2–4 tablespoons of the strawberry filling to give the frosting flavor and colour.

Level And Fill

  • If the cake layers have domed tops, trim them flat. Place the first layer on a cake board or plate. Spread a layer of strawberry filling on top, keeping it away from the very edge so it doesn’t spill out.

Frost The Cake

  • Set the second cake layer on top. Cover the whole cake with a thin layer of frosting to trap the crumbs. Chill it for about 20 minutes. Then add the final coat of frosting and smooth it out.

Decorate And Serve
