Ingredients
  

  • 1 cup whole wheat flour or all-purpose flour
  • 2 cups diced fresh or frozen strawberries
  • ½ cup unsalted butter softened
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ cup white sugar
  • ¼ teaspoon fine salt
  • 2 teaspoons cornstarch
  • 1 large egg
  • 6 tablespoons neutral oil
  • ¼ cup maple syrup or honey
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 cup yogurt kefir, or buttermilk, room temperature
  • cups quick oats or rolled oats
  • ½ cup unsweetened applesauce

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8 or 9×9-inch baking pan with parchment paper. In a small bowl, toss diced strawberries with cornstarch. Set aside.
  • In a large bowl, whisk together applesauce, egg, oil, maple syrup (or honey), milk, yogurt, and vanilla extract until smooth. In another bowl, beat together the softened butter and white sugar until light and fluffy.
  • Stir the butter sugar mixture into the wet ingredients. Add oats, flour, baking powder, baking soda, salt, and zest (if using). Mix just until combined do not overmix. Gently fold in the cornstarch-coated strawberries.
  • Pour the batter into the prepared baking dish and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool for at least 15 minutes before slicing. Serve warm or at room temperature.

Notes

This Strawberry Oatmeal Breakfast Cake Recipe can be prepared the night before and stored in the refrigerator. In the morning, simply reheat a slice in the microwave for a quick breakfast.
Feel free to add nuts like walnuts or almonds for added crunch, or a handful of chocolate chips for a touch of sweetness.
