Ingredients
  

  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 400 grams button mushrooms cleaned and halved
  • 2 garlic cloves finely minced
  • 1 small onion finely diced (optional)
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika optional, for color and mild smokiness
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or coriander finely chopped, for garnish
  • 1 lemon wedge optional, to brighten the flavor

Instructions
 

Step 1: Get The Mushrooms Ready

  • Wipe the mushrooms clean using a damp paper towel or cloth don’t rinse them under water, or they’ll get soggy. If any are on the larger side, cut them in half or into quarters so they cook evenly.

Step 2: Heat Things Up

  • Place a large pan on medium heat and add a mix of olive oil and butter. Let the butter melt and start to foam slightly.

Step 3: Add Some Flavor

  • Toss in the chopped garlic and onions (if you’re using them). Stir them around for a couple of minutes until they soften and smell amazing just don’t let them brown too much.

Step 4: Time For The Mushrooms

  • Spread the mushrooms out in a single layer in the pan. Let them cook without stirring for about 4–5 minutes so they can get a nice golden colour. After that, stir and cook for another 5–7 minutes until they’re soft and browned all over.

Step 5: Season It Up

  • Sprinkle in the thyme, a bit of paprika if you like, and season with salt and pepper. Give everything a good stir so the mushrooms are well coated. Let it cook for another minute so the flavours come together.

Step 6: Finish And Serve

  • Turn off the heat. Sprinkle over some chopped parsley or coriander for freshness. A squeeze of lemon juice adds a nice touch too. Serve warm they’re great as a side dish or a tasty starter.

Notes

If you’re allergic to mushrooms, avoid or use substitutes. Mushrooms release moisture be patient to let it evaporate for proper browning. Flavor varies by fat and seasoning; taste and adjust as needed.
