  • ¼ cup dark rum
  • 1 cup ketchup
  • cup packed brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 teaspoon dry mustard
  • Salt and freshly ground black pepper to taste
  • 1 green chili finely chopped (medium heat)
  • 1 tablespoon Worcestershire sauce

Instructions
 

Start With The Aromatics

  • Warm the olive oil in a medium saucepan over medium heat. Toss in the chopped green chili and let it cook for about a minute, just until it softens a bit and releases its aroma.

Build The Base

  • Stir in the ketchup and tomato paste, then add the brown sugar, molasses, apple cider vinegar, Worcestershire sauce, rum, smoked paprika, garlic powder, onion powder, and dry mustard. Whisk everything together so it forms a smooth mixture.

Let It Simmer

  • Bring the sauce to a light simmer. Turn the heat down low and let it cook for about 10–12 minutes, giving it a stir now and then, until it thickens to a nice, glossy consistency.

Taste And Adjust

  • Season with salt and freshly ground black pepper. Add a little more sweetness, acidity, or heat if you think it needs it.

Cool And Store

  • Take the pan off the heat and allow the sauce to cool down. Use it right away, or store it in an airtight container in the fridge.
