Ingredients
  

  • 1  cup all‑purpose flour
  • 1 cup butter softened
  • ¾ cup granulated sugar or caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 2 to 3 tablespoons whole milk

  • Powdered sugar for dusting

Instructions
 

  • Start by setting your oven to 350°F (175°C). Get your loaf pan ready by greasing it and dusting with a little flour or just line it with parchment paper if you prefer.
  • In a large bowl, beat the butter and sugar together until the mixture looks light and fluffy. This should take about 3 to 4 minutes with a hand mixer or stand mixer.
  • Add the eggs one at a time, making sure each one is fully mixed in before adding the next. Then stir in the vanilla and lemon juice. In a separate bowl, combine the flour, cornstarch, and baking powder. Give it a quick whisk to blend everything evenly.
  • Now gradually mix the dry ingredients into the wet mixture. Stir just until everything comes together don’t overdo it. Add the milk one tablespoon at a time, stirring after each addition, until the batter is soft and easy to spread.
  • Spoon the batter into your prepared pan and smooth out the top. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake sit in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely. Once it’s cooled, give it a light dusting of powdered sugar before serving.
