  • 1 cup butter softened
  • ¾ cup granulated sugar or caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 2 to 3 tablespoons whole milk
  • tablespoons fresh lemon juice
  • Powdered sugar for dusting

Method
 

  1. Start by setting your oven to 350°F (175°C). Get your loaf pan ready by greasing it and dusting with a little flour or just line it with parchment paper if you prefer.
  2. In a large bowl, beat the butter and sugar together until the mixture looks light and fluffy. This should take about 3 to 4 minutes with a hand mixer or stand mixer.
  3. Add the eggs one at a time, making sure each one is fully mixed in before adding the next. Then stir in the vanilla and lemon juice. In a separate bowl, combine the flour, cornstarch, and baking powder. Give it a quick whisk to blend everything evenly.
  4. Now gradually mix the dry ingredients into the wet mixture. Stir just until everything comes together don’t overdo it. Add the milk one tablespoon at a time, stirring after each addition, until the batter is soft and easy to spread.
  5. Spoon the batter into your prepared pan and smooth out the top. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake sit in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely. Once it’s cooled, give it a light dusting of powdered sugar before serving.
