2cupsfresh pineapple chunksor canned, drained
1medium carrotpeeled and chopped
¼cupmolasses
3ozyellow onionapprox. ¼ large onion
1cupbalsamic vinegar
½cupapple cider vinegar
1teaspoonkosher salt
2teaspoonsgarlic powder
2teaspoonsonion powder
2teaspoonsWorcestershire sauce
2teaspoonsliquid smoke
Instructions
Prepare Ingredients:
Remove seeds from habanero peppers and chop all vegetables into smaller chunks for easier blending.
Blend:
In a blender or food processor, combine the pineapple, habanero peppers, carrot, onion, balsamic vinegar, and apple cider vinegar. Blend until smooth.
Cook:
Pour the blended mixture into a medium saucepan. Add molasses, salt, garlic powder, onion powder, Worcestershire sauce, and liquid smoke.
Simmer:
Bring to a simmer over medium heat. Stir occasionally to prevent burning. Reduce heat to low and simmer for 20–25 minutes until the sauce thickens slightly.
Final Blend (Optional):
For a smoother texture, blend again after cooking. Be careful when blending hot liquids vent the lid slightly to release steam.
Cool & Store:
Let the sauce cool completely. Store in a sterilised jar or airtight container in the refrigerator for up to 2 weeks.
