Ingredients
  

  • 2 to 6 habanero peppers seeds removed (use fewer for milder heat)
  • 2 cups fresh pineapple chunks or canned, drained
  • 1 medium carrot peeled and chopped
  • ¼ cup molasses
  • 3 oz yellow onion approx. ¼ large onion
  • 1 cup balsamic vinegar
  • ½ cup apple cider vinegar
  • 1 teaspoon kosher salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons liquid smoke

Method
 

Prepare Ingredients:
  1. Remove seeds from habanero peppers and chop all vegetables into smaller chunks for easier blending.
Blend:
  1. In a blender or food processor, combine the pineapple, habanero peppers, carrot, onion, balsamic vinegar, and apple cider vinegar. Blend until smooth.
Cook:
  1. Pour the blended mixture into a medium saucepan. Add molasses, salt, garlic powder, onion powder, Worcestershire sauce, and liquid smoke.
Simmer:
  1. Bring to a simmer over medium heat. Stir occasionally to prevent burning. Reduce heat to low and simmer for 20–25 minutes until the sauce thickens slightly.
Final Blend (Optional):
  1. For a smoother texture, blend again after cooking. Be careful when blending hot liquids vent the lid slightly to release steam.
Cool & Store:
  1. Let the sauce cool completely. Store in a sterilised jar or airtight container in the refrigerator for up to 2 weeks.
