Ingredients

  • 2 –4 ripe peaches peeled and diced
  • 2 habanero peppers seeded and finely chopped
  • 1 cup sweet onion diced
  • 3 cloves garlic minced
  • 1 Tbsp fresh ginger paste or finely grated fresh ginger
  • 2 Tbsp olive oil
  • 1 ½ cups ketchup
  • 1 cup tomato sauce
  • ¼ cup apple cider vinegar
  • cup brown sugar
  • 2 Tbsp peach preserves or peach nectar
  • 1 tsp smoked paprika
  • 1 tsp dry mustard powder
  • ¼ tsp kosher salt or to taste
  • Salt and black pepper to taste

Equipment

  • Medium saucepan
  • Wooden spoon or heatproof spatula
  • Knife and cutting board
  • Blender or immersion blender
  • Measuring cups and spoons

Method

Saute Aromatics:
  1. In a medium saucepan over medium heat, add olive oil. Once hot, saute the diced onion for 3–4 minutes until softened. Add garlic, ginger, and chopped habaneros. Cook for 2 more minutes, stirring frequently.
Add Fruits & Sauces:
  1. Stir in the diced peaches, ketchup, tomato sauce, apple cider vinegar, brown sugar, peach preserves or nectar, smoked paprika, dry mustard powder, and kosher salt.
Simmer:
  1. Bring the mixture to a gentle boil, then reduce heat and simmer uncovered for about 20–25 minutes. Stir occasionally to prevent sticking.
Blend:
  1. Once the sauce has thickened and peaches are soft, remove from heat. Use an immersion blender or regular blender to puree until smooth. (Be careful blending hot liquids!)
Season & Finish:
  1. Taste and adjust with additional salt, pepper, or sugar as needed. Let cool slightly before transferring to jars or containers.
Store:
  1. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer shelf life.
