- 3 medium ripe peaches peeled, pitted, and finely diced
- 2 tablespoons olive oil
- 1 tablespoon chipotle peppers in adobo sauce minced
- ½ cup ketchup
- ¼ cup apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons light brown sugar
- 1 tablespoon honey optional, for added sweetness
- ½ teaspoon smoked paprika
- ¾ cup water
- 6 tablespoons tomato paste
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Sea salt to taste
- Freshly ground black pepper to taste
Cook The Peaches
Heat a bit of olive oil in a medium sized pot over medium heat. Once hot, add the chopped peaches and cook for about 4 to 5 minutes, stirring occasionally, until they start to soften.
Add The Good Stuff
Now toss in the chipotle peppers, ketchup, tomato paste, vinegar, Worcestershire sauce, brown sugar, and honey (if you’re using it). Sprinkle in the smoked paprika, garlic powder, onion powder, salt, and pepper. Stir everything together so it’s well mixed.
Simmer
Pour in the water and give it another stir. Let the sauce come to a gentle boil, then lower the heat and let it simmer, uncovered, for about 15 to 20 minutes. You’re looking for the peaches to break down and the sauce to thicken up a bit.
Blend It Smooth
Once it’s done simmering, use an immersion blender to puree the sauce right in the pot until it’s nice and smooth. If you don’t have one, let the sauce cool down a bit and blend it in a regular blender (do it in batches if needed). Just be careful hot sauce can splatter.
Always taste as you go. The balance of sweet, sour, smoky, spicy depends a lot on your ingredients and preference. If sauce separates slightly after storing, just whisk or rewarm gently.
