Oven And Pan Prep:
- Set the oven to 350°F (175°C). Prepare a 9×13 inch baking pan by greasing it and dusting with flour, or use parchment paper to line it.
Make The Crust:
- In a large bowl, mix together the yellow cake mix, eggs, melted butter, chopped pecans, and coconut flakes until everything is well combined.
Form The Crust:
- Press the mixture evenly into the bottom of the prepared pan, using a spatula or your hands to create a firm, even layer.
Bake The Crust:
- Put the pan in the oven and bake for 12 to 15 minutes. The crust should be set but not browned. Remove from the oven and set aside.
Prepare The Filling:
- In a clean bowl, beat softened cream cheese until smooth. Slowly add powdered sugar, beating until creamy. Add eggs one by one, mixing well after each. Stir in vanilla extract.
Add Filling To Crust:
- Pour the cream cheese mixture over the crust, spreading it out evenly.
Bake The Cake:
- Return the pan to the oven and bake for another 30 to 35 minutes, until the filling is firm and the edges are lightly golden.
Cool And Serve:
- Let the cake cool completely in the pan. For best texture, refrigerate for a few hours before cutting. serve chilled or at room temperature.
