Ingredients
  

  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp fine salt
  • 3 large eggs at room temperature
  • ¾ cup vegetable oil or melted coconut oil
  • 2 tsp vanilla extract
  • 1 ½ cups freshly grated carrots
  • 1 cup grated apple such as Honeycrisp or Fuji
  • ½ cup shredded coconut
  • ½ cup raisins or dried cranberries
  • ½ cup chopped walnuts or pecans

Cream Cheese Whipped Cream Topping

  • 8 oz cream cheese slightly softened
  • 2 –6 Tbsp granulated sugar
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream very cold
  • 4 g fine sea salt
  • ½ tsp freshly ground cardamom seed

Instructions
 

Get The Oven And Pan Ready

  • Set the oven to 350°F (175°C). Lightly grease a 9 inch square pan and place a piece of parchment on the bottom so the cake comes out easily later.

Mix The Dry Ingredients

  • In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.

Blend The Wet Ingredients

  • In another bowl, whisk the eggs with the oil (or melted coconut oil) and vanilla until the mixture is smooth.

Add The Fruit, Nuts, And Extras

  • Pour the wet ingredients into the dry ones and stir just until they come together. Fold in the grated carrots, grated apple, shredded coconut, raisins or dried cranberries, and chopped nuts. Don’t over mix stop as soon as everything is evenly combined.

Bake The Cake

  • Spread the batter in the prepared pan. Bake for 45–55 minutes, or until a toothpick pushed into the center comes out clean. Let the cake cool completely on a wire rack.

Make The Cream Cheese Whipped Cream Topping

  • Beat the cream cheese with the sugar, vanilla, salt, and cardamom until smooth and creamy. Slowly pour in the cold heavy cream while beating, and continue until the mixture becomes thick and fluffy. Spread the frosting over the cooled cake, slice, and enjoy.
