Combine Ingredients:
- In a small saucepan, add the miso paste, ketchup, maple syrup (or honey), brown sugar, rice vinegar, soy sauce, Worcestershire sauce, sesame oil, and all spices and seasonings.
Heat Gently:
- Place the saucepan over medium-low heat. Whisk the mixture continuously to prevent burning, until the sugar dissolves and the sauce becomes smooth and glossy about 5–7 minutes.
Adjust Consistency:
- Add water 1 tablespoon at a time until you reach your desired consistency. The sauce should be thick enough to coat a spoon but still pourable.
Taste & Finish:
- Taste the sauce and adjust the seasoning with salt or extra vinegar for tanginess, if needed.
Cool & Store:
- Let the sauce cool before transferring it to a clean jar or airtight container. Refrigerate for up to 2 weeks.
