Ingredients
  

  • ½ cup white miso paste
  • cup ketchup
  • cup pure maple syrupor honey
  • ¼ cup light brown sugar packed
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dry mustard powder
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 teaspoons smoked paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for heat
  • Salt to taste
  • 2 tablespoons water adjust as needed for consistency

Method
 

Combine Ingredients:
  1. In a small saucepan, add the miso paste, ketchup, maple syrup (or honey), brown sugar, rice vinegar, soy sauce, Worcestershire sauce, sesame oil, and all spices and seasonings.
Heat Gently:
  1. Place the saucepan over medium-low heat. Whisk the mixture continuously to prevent burning, until the sugar dissolves and the sauce becomes smooth and glossy about 5–7 minutes.
Adjust Consistency:
  1. Add water 1 tablespoon at a time until you reach your desired consistency. The sauce should be thick enough to coat a spoon but still pourable.
Taste & Finish:
  1. Taste the sauce and adjust the seasoning with salt or extra vinegar for tanginess, if needed.
Cool & Store:
  1. Let the sauce cool before transferring it to a clean jar or airtight container. Refrigerate for up to 2 weeks.
