Ingredients
  

For The Cake

  • 120 g mixed dried fruits raisins, currants, chopped dates, dried cranberries
  • 30 g chopped almonds or walnuts
  • 100 g brown sugar
  • 2 large eggs at room temperature
  • 95 g plain all purpose flour
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • 1 tsp vanilla extract
  • 20 g molasses or honey
  • 1 pinch salt
  • 30 ml milk

For The Icing

  • 150 g icing sugar confectioners’ sugar
  • 22 ml fresh orange juice 1½ tbsp

Instructions
 

Get The Oven Ready

  • Preheat your oven to 170°C (340°F). Lightly grease mini cake molds.

Mix The Wet Ingredients

  • In a mixing bowl, whisk the eggs and brown sugar until pale and slightly fluffy. Add the vanilla extract, molasses (or honey), and milk, then mix until smooth.

Prepare The Dry Ingredients

  • In a separate bowl, sift together the flour, baking powder, salt, and spices.

Bring Everything Together

  • Slowly fold the dry ingredients into the wet mixture. Add the dried fruit and chopped nuts, stirring gently until evenly distributed.

Bake The Cakes

  • Spoon the batter into the prepared molds, filling them evenly. Bake for 22–25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cakes to cool completely.

Glaze And Serve

  • Stir the icing sugar with orange juice to make a smooth glaze. Drizzle over the cooled cakes and let it set before serving. Enjoy your festive mini Christmas cakes.
