Ingredients
  

  • 2 cups mushrooms button or cremini, sliced
  • 1 tablespoon olive oil
  • 1 small onion thinly sliced
  • 1 medium tomato finely chopped
  • 1 jalapeno or serrano pepper finely chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh cilantro chopped
  • Juice of ½ lime

Instructions
 

Cook The Vegetables

  • Pour some olive oil into a skillet and warm it over medium heat. Add the sliced onions and jalapeno (or serrano) and cook for 2–3 minutes until they start to soften. Toss in the mushrooms and continue cooking for 4–5 minutes, until they release their juices and turn golden brown.

Add The Flavours

  • Mix in the chopped tomato along with smoked paprika, cumin, garlic powder, dried oregano, salt, and black pepper. Let everything cook together for 2–3 minutes so the tomato softens and the spices meld.

Finish And Serve

  • Remove the skillet from the heat, then stir in chopped cilantro and a squeeze of lime juice. Taste and adjust the seasoning if needed. Serve it warm on its own, or with tortillas for a simple Mexican-style meal.
