Ingredients
  

  • 250 g fresh white mushrooms cleaned and sliced
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves finely chopped
  • 1 small red onion thinly sliced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon balsamic vinegar

Instructions
 

Prepare Your Ingredients:

  • Slice the mushrooms and red onion. Mince the garlic and chop the parsley. Have all your spices measured out and ready to go.

Cook The Aromatics:

  • Heat the olive oil in a large skillet over medium heat. Add the garlic and red onion and cook for 2–3 minutes until they smell fragrant and start to soften.

Cook The Mushrooms:

  • Toss the sliced mushrooms into the skillet. Sprinkle in the oregano, thyme, red pepper flakes, salt, and pepper. Cook for 6–8 minutes, stirring every now and then, until the mushrooms release their moisture and turn a nice golden brown.

Add The Finishing Flavors:

  • Pour in the balsamic vinegar and lemon juice. Let it cook for another 1–2 minutes, stirring occasionally, until the liquid reduces slightly and coats the mushrooms evenly.

Serve:

  • Take the skillet off the heat and sprinkle with fresh parsley. Serve warm as a side, or use it as a topping for bread, pasta, or salads.
