Place a pan on medium heat, add oil, then add cumin seeds. Let them sizzle and release their aroma.
Cook The Onions And Spices
Add chopped onions and green chili. Cook until the onions turn light golden. Add ginger garlic paste and saute for about 30–40 seconds until the raw smell disappears.
Make The Masala
Add chopped or blended tomatoes along with turmeric, red chili powder, coriander powder, and salt. Cook, stirring occasionally, until the masala thickens and oil begins to separate.
Add The Mushrooms
Mix in the sliced mushrooms. Cover and cook for 5–7 minutes, stirring now and then, until the mushrooms soften and release their juices.
Finish And Serve
Sprinkle garam masala, give it a gentle mix, and cook uncovered for 1–2 minutes. Garnish with fresh coriander and serve hot.
