Ingredients
  

  • 1 cup organic ketchup
  • ½ cup pure maple syrup
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 2 tablespoons Worcestershire sauce
  • ¼ cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • ¼ cup firmly packed brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground coriander optional
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • 2 teaspoons lemon zest
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for heat
  • 1 tablespoon olive oil

Equipment

Method
 

Combine ingredients:
  1. In a medium saucepan, add the ketchup, maple syrup, apple cider vinegar, water, Worcestershire sauce, lemon juice, and olive oil. Stir to combine.
Add dry spices:
  1. Mix in the Dijon mustard, brown sugar, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and lemon zest. If using, add coriander and cayenne pepper for extra flavour and heat.
Cook:
  1. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
Simmer:
  1. Reduce heat to low and let the sauce simmer for about 10-15 minutes, stirring frequently, until it thickens slightly and the flavours meld.
Adjust:
  1. Taste and adjust seasoning if needed add more salt, lemon juice, or cayenne to suit your preference.
Cool and store:
  1. Remove from heat and let the sauce cool. Use immediately or transfer to a clean jar or bottle and refrigerate. It will keep well for up to two weeks.
