Ingredients
  

For The Cake:

  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp allspice
  • ½ tsp ground ginger
  • ½ tsp salt
  • 4 large eggs
  • ½ cup butter melted
  • ½ cup brown monk fruit sweetener or any low-carb sweetener
  • ½ cup unsweetened almond milk
  • 2 tsp vanilla extract
  • 1 tbsp orange zest
  • ½ cup chopped walnuts or pecans
  • cup sugar free dried cranberries optional, for festive touch
  • ¼ cup unflavored whey protein powder

For The Keto Frosting:

  • 4 oz cream cheese softened
  • 2 tbsp butter softened
  • 2 –3 tbsp powdered erythritol or 1½ cups powdered low-carb sweetener
  • 2 tsp vanilla extract or vanilla paste

Instructions
 

Step 1: Preheat The Oven

  • Set your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper so the cake doesn’t stick.

Step 2: Mix The Dry Ingredients

  • In a large bowl, stir together almond flour, coconut flour, whey protein powder, baking powder, baking soda, cinnamon, nutmeg, allspice, ginger, and salt until everything is well combined.

Step 3: Prepare The Wet Ingredients

  • In another bowl, whisk together the eggs, melted butter, monk fruit sweetener, almond milk, vanilla extract, and orange zest until smooth.

Step 4: Combine Wet And Dry

  • Slowly add the wet mixture to the dry ingredients, mixing until fully combined. The batter will be thick, but that’s okay.

Step 5: Add Nuts And Cranberries

  • Gently fold in your chopped walnuts or pecans and sugar free dried cranberries, if you’re using them.

Step 6: Bake The Cake

  • Pour the batter into your prepared pan and smooth the top. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cool The Cake

  • Let the cake cool in the pan for about 10 minutes, then move it to a wire rack to cool completely.

Step 8: Make The Frosting

  • If you want frosting, beat softened cream cheese and butter together in a bowl until smooth. Slowly mix in powdered erythritol (or your preferred powdered sweetener) and vanilla extract until creamy.

Step 9: Frost The Cake And Serve

  • Once the cake is completely cooled, spread the frosting evenly on top. Sprinkle extra nuts or cranberries on top if you like. Slice serve and enjoy
