Saute Aromatics:
- In a medium saucepan, heat olive oil over medium heat. Add minced garlic and onion. Saute for 2–3 minutes, until fragrant and translucent.
Add Spices:
- Stir in chili powder, cumin, black pepper, and nutmeg. Cook for 1 minute to bloom the spices.
Incorporate Liquids & Sweeteners:
- Add ketchup, brown sugar, Worcestershire sauce, soy sauce, cola, lemon juice, vinegar, Tabasco, and bourbon. Stir to combine.
Simmer:
- Bring the sauce to a gentle boil, then reduce heat and simmer uncovered for 15–20 minutes, stirring occasionally. Let it thicken to your desired consistency.
Final Touches:
- Stir in liquid smoke (if using) and adjust salt to taste. Simmer for another 2–3 minutes.
Cool & Store:
- Remove from heat and let cool slightly. Transfer to a sterilized jar or container. Store in the fridge for up to 2 weeks.
