Kentucky BBQ Sauce

Ingredients
  

  • 2 tablespoons olive oil
  • 2 cloves garlic finely minced
  • ¼ cup finely chopped onion
  • 2 teaspoons chilli powder
  • ½ teaspoon ground cumin
  • ½ teaspoon ground black pepper
  • 2 tablespoons Worcestershire sauce
  • ¾ cup ketchup
  • ¼ teaspoon ground nutmeg
  • ½ cup cola such as Coca-Cola
  • cup dark brown sugar packed
  • 2 tablespoons soy sauce
  • 2 teaspoons freshly squeezed lemon juice
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon Tabasco sauce or to taste
  • ⅓ to ½ cup Kentucky bourbon adjust to taste
  • 1 teaspoon liquid smoke optional but recommended
  • Pinch of salt to taste

Equipment

  • Medium saucepan
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Knife and cutting board
  • Small whisk (optional)
  • Airtight jar or container (for storage)

Method
 

Saute Aromatics:
  1. In a medium saucepan, heat olive oil over medium heat. Add minced garlic and onion. Saute for 2–3 minutes, until fragrant and translucent.
Add Spices:
  1. Stir in chili powder, cumin, black pepper, and nutmeg. Cook for 1 minute to bloom the spices.
Incorporate Liquids & Sweeteners:
  1. Add ketchup, brown sugar, Worcestershire sauce, soy sauce, cola, lemon juice, vinegar, Tabasco, and bourbon. Stir to combine.
Simmer:
  1. Bring the sauce to a gentle boil, then reduce heat and simmer uncovered for 15–20 minutes, stirring occasionally. Let it thicken to your desired consistency.
Final Touches:
  1. Stir in liquid smoke (if using) and adjust salt to taste. Simmer for another 2–3 minutes.
Cool & Store:
  1. Remove from heat and let cool slightly. Transfer to a sterilized jar or container. Store in the fridge for up to 2 weeks.
