Ingredients
  

  • 1 cup tomato ketchup
  • 5 cups freshly brewed black coffee strong
  • 2 pounds light brown sugar adjust to taste for sweetness
  • 1 teaspoon smoked paprika
  • ¼ cup dark molasses
  • ¼ cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon chili powder

Method
 

  1. In a large saucepan over medium heat, pour in the ketchup, brewed coffee, apple cider vinegar, molasses, Worcestershire sauce, and Dijon mustard. Stir to combine. Gradually whisk in the brown sugar, garlic powder, onion powder, chili powder (if using), salt, and smoked paprika. Make sure the sugar dissolves completely.
  2. Bring the mixture to a gentle boil. Once it starts bubbling, reduce the heat to low and let it simmer uncovered for 25–35 minutes, stirring occasionally. This allows the flavors to meld and the sauce to thicken. If you prefer a thicker sauce, continue simmering for an additional 5–10 minutes.
  3. Taste and adjust seasoning or sweetness as needed (more brown sugar for sweetness, more vinegar for tang, etc.). Remove from heat and allow the sauce to cool completely. Pour into sterilised jars or bottles.

Notes

Use fresh, strong coffee espresso or French press works best. Instant coffee won’t give the same depth. If it thickens too much as it cools, whisk in a little warm water until you hit your desired texture.
Feel adventurous? Add a splash of bourbon or a few drops of liquid smoke for extra richness. This sauce is amazing on grilled chicken, pork ribs, meatloaf, or even as a tasty burger topper. I sometimes toss roasted veggies in it!
