Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 4 large eggs beaten
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • ½ tsp ground nutmeg
  • ½ tsp mixed spice
  • ½ cup crushed pineapple drained
  • ½ cup chopped walnuts or pecans
  • ¼ cup raisins
  • 1 ½ cups finely grated carrots
  • ¾ cup vegetable oil

Method
 

Preheat Oven & Prepare Pan:
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square cake pan or line it with parchment paper.
Mix Dry Ingredients:
  1. In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, mixed spice, and salt. Set aside.
Combine Sugars And Wet Ingredients:
  1. In another bowl, whisk the beaten eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth and well combined.
Incorporate Wet & Dry Ingredients:
  1. Gradually add the dry ingredients into the wet mixture, folding gently to combine without over mixing.
Add Carrots, Pineapple, Nuts, And Raisins:
  1. Fold in the finely grated carrots, drained crushed pineapple, and if using, the chopped walnuts or pecans and raisins. Mix just until evenly distributed.
Pour Batter Into Pan:
  1. Transfer the batter to the prepared cake pan, smoothing the top with a spatula.
Bake The Cake:
  1. Place the pan in the oven and bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Cool & Serve:
  1. Remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Serve plain or with cream cheese frosting if desired.

Notes

Feel free to adjust the spices to suit your palate add more cinnamon for warmth or a pinch of ginger for zing.
