Ingredients
  

  • 2 teaspoons apple cider vinegar
  • 1 cup ketchup
  • 1 cup tomato sauce
  • ½ cup pineapple juice
  • ¼ cup hot sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • ½ teaspoon ground ginger
  • ½ teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • 2 garlic cloves minced
  • 1 small onion finely diced
  • 1 tablespoon liquid smoke
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • 1 Scotch bonnet pepper seeded and minced
  • 1 teaspoon ground allspice
  • ½ teaspoon dried thyme
  • 1 tablespoon olive oil
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dry mustard
  • ¼ teaspoon Accent seasoning optional

Instructions
 

Saute The Aromatics

  • Warm a little olive oil in a medium pot over medium heat. Add the minced garlic, chopped onion, and Scotch bonnet pepper. Cook for a couple of minutes until everything softens and releases its fragrance.

Add The Dry Spices

  • Sprinkle in the allspice, thyme, ginger, cayenne, black pepper, salt, and dry mustard. Stir for about a minute so the spices can wake up and develop their flavor.

Bring In The Sweetness

  • Add the brown sugar and honey, stirring until they melt into the mixture.

Pour In The Sauces And Liquids

  • Add the ketchup, tomato puree, hot sauce, Worcestershire sauce, pineapple juice, lime juice, and apple cider vinegar. Mix well to bring everything together.

Boost The Flavor

  • Stir in the liquid smoke and Accent seasoning if you’re using it. Make sure the sauce is smooth and evenly blended.

Let It Simmer

  • Turn the heat down low and let the sauce bubble gently for 15–20 minutes, stirring from time to time. It will thicken and take on a richer flavor as it cooks.

Cool And Store

  • Take the pot off the heat and let the sauce cool down. Pour it into a jar or airtight container. It will keep in the fridge for about two weeks, and you can freeze it if you want to store it longer.
