Ingredients
  

  • 300 ml tomato ketchup
  • 4 tbsp white wine vinegar or apple cider vinegar
  • 5 tbsp dark brown sugar
  • 2 tbsp black treacle or molasses
  • 3 tbsp honey
  • 2 tbsp neutral vegetable oil
  • 1 tsp chopped garlic
  • 1 tbsp finely chopped onion
  • ½ tsp mustard powder
  • 1 tsp smoked paprika
  • ½ tsp freshly ground black pepper
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • 1 tbsp Worcestershire sauce
  • Water optional, to adjust consistency

Instructions
 

Cook The Onion And Garlic

  • Start by heating a bit of vegetable oil in a medium-sized saucepan over medium heat. Toss in the chopped onion and garlic, and cook them for a couple of minutes until they soften and smell amazing just don’t let them brown.

Add The Core Ingredients

  • Now stir in the ketchup, vinegar, brown sugar, treacle or molasses, and honey. Give everything a good mix, and let it gently bubble away for a bit.

Add The Seasonings

  • Next, add the smoked paprika, a bit of salt and black pepper, and the mustard powder (or English mustard if you’re using that). If you like a bit of spice, now’s the time to add a pinch of cayenne.

Stir In Worcestershire Sauce

  • Pour in the Worcestershire sauce and stir again so all the flavours start to come together.

Let It Simmer

  • Turn the heat down low and let the sauce cook gently for about 15 to 20 minutes. Stir every now and then. If it thickens up more than you’d like, just splash in a little water until it’s how you like it.

Blend If You Want It Smooth

  • If you prefer a silky smooth sauce, blend it up using a hand blender right in the pot, or carefully pour it into a blender and blitz until smooth.

Cool Down And Store

  • Once the sauce has cooled completely, pour it into a clean jar or airtight container. It’ll keep nicely in the fridge for up to two weeks.
