Ingredients
  

  • 1 cup pearled farro rinsed
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion finely diced
  • 3 garlic cloves minced
  • 10 oz cremini or baby bella mushrooms thinly sliced
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon butter optional, for richer flavor
  • 3 to 4 cups chicken broth vegetable broth, or water
  • Fresh herbs such as parsley thyme, or chives, chopped
  • Optional flavor boosts: grated Parmesan extra butter, a splash of white wine, a squeeze of lemon juice, or additional vegetables

Instructions
 

Saute The Aromatics

  • Warm the olive oil in a medium pan over medium heat. Add the chopped onion and cook for about 3–4 minutes, until it softens. Stir in the garlic and let it cook for another 30 seconds, just until it becomes fragrant.

Cook The Mushrooms

  • Add the sliced mushrooms and let them cook for 5–7 minutes. Give them an occasional stir as they release their moisture and start to brown. Season with a little salt and pepper.

Add The Thyme And Farro

  • Mix in the thyme and the rinsed farro. Let the farro toast for a minute or two to bring out its nutty flavor.

Pour In The Liquid

  • Add about 3 cups of broth (or water). Bring everything to a gentle simmer. If you’re using white wine, add a splash before the broth and let it cook for a minute.

Simmer Until Tender

  • Lower the heat and let the mixture simmer uncovered for 25–30 minutes, stirring now and then. Add more liquid if needed until the farro becomes tender and the dish turns creamy. You can stir in a little butter at the end for extra richness.

Finish And Serve

  • Taste and adjust with more salt, pepper, or a squeeze of lemon. Fold in fresh herbs and Parmesan, if you like. Serve warm perfect as a cozy side dish or a satisfying vegetarian main.
