Instructions
 

Prep The Mushrooms:

  • Wipe the eryngii mushrooms clean with a damp cloth or paper towel. Slice them lengthwise into thick, even pieces so they cook at the same rate.

Light Seasoning:

  • If you like, toss the slices in a bowl with a pinch of salt, some pepper, and a light drizzle of olive oil.

Warm The Pan:

  • Turn the heat down to medium. Stir in the garlic and thyme for about 30 seconds, just until aromatic. Splash in the soy sauce or balsamic vinegar and gently coat the mushrooms.

Finish And Serve:

  • Move everything to a plate. Top with green onions, parsley, lemon zest, or a squeeze of fresh lemon juice if you want a brighter finish.
