Ingredients
  

For Soaked Fruits (Quick Method):

  • 1 cup mixed dried fruits raisins, currants, figs, khajoor/dates, cranberries, chopped apricots
  • ¼ cup tutti frutti
  • ¼ cup orange juice
  • 2 tbsp water
  • 200 g mixed berries fresh or frozen
  • 200 ml grape juice

For The Cake:

  • cups all purpose flour maida
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup melted butter or oil
  • ¾ cup brown sugar
  • 1 cup thick curd yogurt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon powder
  • ½ tsp nutmeg powder
  • ¼ tsp clove powder
  • A pinch of salt
  • 50 g almond powder
  • 2 tbsp pistachios chopped
  • 2 tbsp cashews chopped

Instructions
 

Step 1: Soak The Fruits

  • In a large mixing bowl, combine the dried fruits, tutti frutti, orange juice, water, mixed berries, and grape juice. Stir everything together and let the fruits soak for at least an hour so they become plump and flavourful.

Step 2: Preheat The Oven

  • Set your oven to 170°C (340°F). Grease an 8-inch cake pan and line it with parchment paper to prevent sticking.

Step 3: Prepare The Dry Ingredients

  • In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, clove powder, almond powder, and a pinch of salt. Keep this mixture aside.

Step 4: Prepare The Wet Ingredients

  • In another bowl, whisk the melted butter (or oil) with brown sugar until smooth. Stir in the yogurt and vanilla extract until everything is well combined.

Step 5: Mix Wet And Dry Ingredients

  • Slowly fold the dry ingredients into the wet mixture using a spatula, mixing gently until you get a smooth batter. Add the soaked fruits along with any leftover juice, and then stir in the chopped pistachios and cashews.

Step 6: Bake The Cake

  • Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cool And Serve

  • Let the cake cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy a festive, nutty, fruity treat!
