Equipment

  • Small bowl (for soaking mushrooms)
  • Fine mesh sieve
  • Saucepan or skillet
  • Wooden spoon or spatula

Ingredients
  

  • 30 g dried mushrooms
  • 250 ml hot water for soaking the dried mushrooms
  • 1 tbsp olive oil or unsalted butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ tsp thyme fresh or dried
  • ¼ tsp chili flakes optional, for heat
  • Salt and freshly ground black pepper to taste
  • 100 ml vegetable or chicken stock optional, for added depth of flavor
  • Fresh parsley chopped, for garnish

Instructions
 

Soak The Mushrooms:

  • Put the dried mushrooms in a bowl and pour 250 ml of hot water over them. Let them sit for about 15 minutes until they soften.

Strain And Save The Soaking Liquid:

  • Strain the mushrooms through a fine mesh sieve lining it with cheesecloth helps if you have some. Keep the soaking liquid and mushrooms separate for now.

Prepare The Mushrooms:

  • If the mushrooms are large, chop them into bite sized pieces.

Cook The Aromatics:

  • Heat some olive oil or butter in a pan over medium heat. Add finely chopped onion and cook until it becomes soft and translucent, around 3-4 minutes. Then stir in minced garlic, thyme, and chili flakes if you’re using them. Cook for another minute until everything smells fragrant.

Saute The Mushrooms:

  • Add the chopped mushrooms to the pan and cook for about 5 to 7 minutes until they’re tender. Season with salt and pepper to your taste.

Add Liquids And Reduce:

  • Pour in the reserved mushroom soaking liquid along with some vegetable or chicken stock. Bring everything to a gentle simmer and cook for 5 to 7 minutes until the liquid reduces a bit and the flavours deepen. Taste and adjust seasoning if needed.

Finish And Serve:

  • Sprinkle fresh parsley over the top before serving. This mushroom mixture works great as a side dish, a sauce for pasta or risotto, or simply spread on toasted bread.
