30gdried mushrooms
250mlhot waterfor soaking the dried mushrooms
1tbspolive oil or unsalted butter
1small onionfinely chopped

100mlvegetable or chicken stockoptional, for added depth of flavor

Instructions
Soak The Mushrooms:
Put the dried mushrooms in a bowl and pour 250 ml of hot water over them. Let them sit for about 15 minutes until they soften.
Strain And Save The Soaking Liquid:
Strain the mushrooms through a fine mesh sieve lining it with cheesecloth helps if you have some. Keep the soaking liquid and mushrooms separate for now.
Prepare The Mushrooms:
If the mushrooms are large, chop them into bite sized pieces.
Cook The Aromatics:
Heat some olive oil or butter in a pan over medium heat. Add finely chopped onion and cook until it becomes soft and translucent, around 3-4 minutes. Then stir in minced garlic, thyme, and chili flakes if you’re using them. Cook for another minute until everything smells fragrant.
Saute The Mushrooms:
Add the chopped mushrooms to the pan and cook for about 5 to 7 minutes until they’re tender. Season with salt and pepper to your taste.
Add Liquids And Reduce:
Pour in the reserved mushroom soaking liquid along with some vegetable or chicken stock. Bring everything to a gentle simmer and cook for 5 to 7 minutes until the liquid reduces a bit and the flavours deepen. Taste and adjust seasoning if needed.
Finish And Serve:
Sprinkle fresh parsley over the top before serving. This mushroom mixture works great as a side dish, a sauce for pasta or risotto, or simply spread on toasted bread.
