Ingredients
  

  • 1 cup apple cider vinegar
  • 1 tablespoon white sugar optional, balances acidity
  • 4 cloves garlic peeled
  • 2 cups water
  • 1 tablespoon whole black peppercorns
  • 1 teaspoon red pepper flakes adjust for heat preference
  • 2 –3 fresh dill sprigs
  • 1 tablespoon yellow mustard seeds
  • 1 bay leaf
  • pounds Kirby or Persian cucumbers
  • 1 tablespoon kosher salt

Instructions
 

Step 1: Get The Cucumbers Ready

  • Rinse your Kirby or Persian cucumbers well. Slice them into spears or rounds whatever you prefer and set them aside.

Step 2: Prepare The Pickling Brine

  • In a medium saucepan, combine water, apple cider vinegar, kosher salt, and sugar (if you like a touch of sweetness). Toss in garlic, black peppercorns, mustard seeds, red pepper flakes, dill sprigs, and a bay leaf. Heat gently over medium heat, stirring occasionally, until the salt and sugar have fully dissolved.

Step 3: Fill The Jars

  • Pack the cucumber slices into clean glass jars. They should fit snugly but don’t crush them.

Step 4: Add The Brine

  • Pour the hot brine over the cucumbers, making sure they’re completely covered. Leave a little space at the top so the contents can expand.

Step 5: Cool And Store

  • Let the jars come to room temperature. Seal them with lids and refrigerate. For the best flavor, wait at least 24 hours before tasting. Your pickles will stay fresh for 4–6 weeks in the fridge.
