Equipment

  • Sharp knife or mandoline slicer

Ingredients
  

  • 1  lb approximately 450 g mushrooms
  • Optional: a light drizzle of olive oil and a pinch of salt/herbs

Instructions
 

Clean The Mushrooms

  • Use a damp cloth or a soft brush to gently wipe away any dirt. Don’t rinse them under water mushrooms soak up moisture like a sponge, and that’ll slow down the drying process.

Slice Them Evenly

  • Cut the mushrooms into slices about 1/8 to 1/4 inch thick. Try to keep them all around the same size so they dry at the same rate.

Add Seasoning (Optional)

  • If you want to add a little flavor before drying, toss the slices with a tiny bit of olive oil, salt, or dried herbs. Keep it simple if you plan to use them in recipes later.

Lay Them Out To Dry

  • Spread the slices in a single layer on dehydrator trays or on a baking sheet lined with parchment paper. Make sure the pieces aren’t overlapping.

Start Drying

  • If you’re using a dehydrator: Set it to 125°F (around 52°C) and let the mushrooms dry for 4 to 8 hours. If you’re using an oven: Set it to the lowest temperature (usually 170°F or 77°C). Leave the oven door slightly open to let moisture escape. Flip the slices every so often and dry for about 4 to 5 hours.

Check If They’re Done

  • They should feel dry and brittle, and they should snap when you bend them. No moisture should be left inside. Test a few pieces to be sure.

Cool Them Down & Store

  • Let the mushrooms cool completely before storing. Keep them in an airtight container or vacuum sealed bag in a cool, dark place. For longer storage, pop them in the fridge or freezer.
