Ingredients
  

  • 500 grams fresh button mushrooms washed and thoroughly dried
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 cup cold sparkling water or cold beer for the batter
  • 2 eggs lightly beaten
  • 1 cup Italian seasoned breadcrumbs
  • 2 cups cooking oil vegetable, canola, or sunflower oil for frying
  • Optional: chopped fresh parsley for garnish

Getting The Mushrooms Ready:

  • Start by cleaning your button mushrooms. Just wipe them gently with a damp cloth or paper towel don’t soak them in water because they’ll soak it up and get soggy. Make sure they’re nice and dry before moving on.

Making The Batter:

  • In a bowl, mix the flour, garlic powder, smoked paprika, salt, and pepper. Slowly whisk in the cold sparkling water or beer, stirring constantly until the batter is smooth. It should be a bit thick but still runny enough to coat the mushrooms evenly.

Setting Up Your Breading Station:

  • Put the beaten eggs in one shallow dish, and in another, pour the Italian seasoned breadcrumbs.

Heating The Oil:

  • Heat your oil in a deep pan or fryer to about 180°C (350°F). If you have a thermometer, use it to keep the temperature steady.

Coating The Mushrooms:

  • Work with a few mushrooms at a time. Dip each one in the batter first, letting the extra drip off. Then dip it into the eggs, and finally roll it in the breadcrumbs until it’s fully covered.

Frying Time:

  • Carefully place the coated mushrooms into the hot oil. Fry them for around 3 to 4 minutes until they’re golden and crispy, turning them now and then to cook evenly.

Draining And Serving:

  • Use a slotted spoon to take the mushrooms out and put them on paper towels to soak up any extra oil. If you like, sprinkle some chopped parsley on top.
