Ingredients
  

  • 250 grams fresh button mushrooms cleaned and sliced
  • 2 tablespoons vegetable or sesame oil
  • 1 medium spring onion finely chopped
  • 1 medium green bell pepper sliced into strips
  • 4-5 garlic cloves finely minced
  • 2-3 green chilies slit or chopped (adjust to taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon chili sauce adjust spice level as preferred
  • 1 teaspoon vinegar
  • 1/2 teaspoon black pepper powder
  • Salt to taste
  • 1 teaspoon cornstarch mixed with 2 tablespoons water optional, for thickening
  • Fresh coriander leaves chopped (for garnish)
  • 1 teaspoon finely chopped ginger about 1 inch piece
  • 1 to 2 teaspoons water to mix with cornstarch
  • 1/2 to 1 teaspoon sugar adjust as needed

Instructions
 

Step 1: Get Your Ingredients Ready

  • Wash the button mushrooms and slice them. Finely chop the spring onion, garlic, green chilies, and ginger. Cut the green bell pepper into thin strips.

Step 2: Heat The Oil

  • Pour about 2 tablespoons of oil into a frying pan or wok and warm it over medium high heat.

Step 3: Cook The Aromatics

  • Throw in the minced garlic, chopped ginger, and green chilies. Stir them around for about a minute until they start to smell amazing.

Step 4: Add The Veggies

  • Toss in the sliced mushrooms and bell pepper strips. Keep stirring for 4 to 5 minutes until the mushrooms let out their moisture and soften up.

Step 5: Add The Sauces

  • Pour in the soy sauce, tomato ketchup, chili sauce, and vinegar. Mix everything well so the veggies get nicely coated.

Step 6: Season It

  • Sprinkle in some black pepper, salt to taste, and a pinch of sugar. Give it a good stir.

Step 7: Thicken The Sauce (If You Want)

  • If you like your sauce a bit thicker, mix a little cornstarch with water until smooth. Pour it into the pan and stir continuously for a minute or two until the sauce thickens.

Step 8: Final Touch

  • Add the chopped spring onions, stir everything together for another minute.

Step 9: Serve

  • Take it off the heat, sprinkle fresh coriander on top, and serve it hot.

Notes

Use fresh mushrooms for the best texture. Adjust green chilies and chili sauce to control spiciness. Serve immediately for crispiness. Adding cornflour slurry enhances the sauce’s consistency and gives a perfect glaze.
