- 2 tablespoons vegetable or sesame oil
- 1 medium spring onion finely chopped
- 1 medium green bell pepper sliced into strips
- 4-5 garlic cloves finely minced
- 2-3 green chilies slit or chopped (adjust to taste)
- 2 tablespoons soy sauce
- 1 tablespoon tomato ketchup
- 1 tablespoon chili sauce adjust spice level as preferred
- 1 teaspoon vinegar
- 1/2 teaspoon black pepper powder
- Salt to taste
- 1 teaspoon cornstarch mixed with 2 tablespoons water optional, for thickening
- Fresh coriander leaves chopped (for garnish)
- 1 teaspoon finely chopped ginger about 1 inch piece
- 1 to 2 teaspoons water to mix with cornstarch
- 1/2 to 1 teaspoon sugar adjust as needed

Wash the button mushrooms and slice them. Finely chop the spring onion, garlic, green chilies, and ginger. Cut the green bell pepper into thin strips.
