- 4 boneless skinless chicken breasts
- 1/2 cup chicken broth
- 8 oz brown mushrooms sliced
- 2 tablespoons olive oil
- 1 teaspoon onion powder
- 3 cloves garlic minced
- Salt and ground black pepper to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 3 tablespoons butter or ghee for Paleo/Whole30
- 1/2 cup heavy cream or sour cream as an alternative
- 1 teaspoon dried thyme
- Fresh parsley chopped (for garnish)
Get The Chicken Ready:
Start by seasoning both sides of the chicken breasts with salt, pepper, onion powder, paprika, oregano, and a bit of dried thyme.
Cook The Chicken:
Heat some olive oil in a large pan over medium-high heat. Place the chicken breasts in the pan and cook them for about 6 to 7 minutes on each side, until they’re nicely browned and fully cooked. Once done, take the chicken out and set it aside.
Saute The Mushrooms And Garlic:
In the same pan, add a little butter or ghee and let it melt. Toss in the sliced mushrooms and cook them for around 5 to 7 minutes, until they start to get golden. Then add the minced garlic and cook for another minute or two until you can really smell that garlic aroma.
Make The Sauce:
Pour in the chicken broth, scraping up any tasty bits stuck to the bottom of the pan. Let the broth simmer and reduce for a couple of minutes. Next, stir in the heavy cream or sour cream, and keep it on low heat until the sauce thickens a bit, which should take around 3 to 4 minutes.
Bring It All Together:
Put the chicken breasts back into the pan, spoon some of the creamy mushroom sauce over them, and let everything cook together for a few more minutes so the flavours blend well and the chicken warms up.
Make sure not to overcook the chicken; it can become dry. Use a meat thermometer if possible the internal temperature should reach 165°F (74°C) for safe consumption.
Also, feel free to adjust cream quantity based on how thick or saucy you want your dish.
