Ingredients
  

  • 300 g chestnut mushrooms cleaned and thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves finely minced
  • 1 small shallot finely diced
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • 2 tbsp unsalted butter
  • Salt and freshly ground pepper to taste
  • 1 tbsp soy sauce optional, for enhanced umami
  • Fresh parsley chopped (for garnish)

Get Everything Ready

  • Start by rinsing the chestnut mushrooms under cold water. Pat them dry gently with a cloth or paper towel, then slice them evenly. Peel and finely chop the garlic and shallot.

Heat Up The Pan

  • Place a large frying pan or skillet over medium heat. Add a good splash of olive oil and let it heat up until it starts to shimmer.

Saute The Garlic And Shallot

  • Toss in the chopped garlic and shallot. Stir them around for a couple of minutes, just until they smell amazing and start to turn soft and see through.

Add The Mushrooms

  • Drop in the sliced mushrooms. Let them cook for about 6 to 8 minutes, stirring now and then. They’ll shrink a bit and start to release their juices.

Season And Add Herbs

  • Sprinkle in some thyme, salt, and freshly cracked black pepper. If you’re using soy sauce, now’s the time to pour it in. Keep cooking for another 2 to 3 minutes so everything blends nicely and the pan isn’t too watery.

Finish With Butter

  • Turn the heat down a notch. Add a knob of butter and stir it through until it melts completely, giving the mushrooms a rich, glossy coating.

Final Touch And Serve

  • Take the pan off the heat. Scatter over some chopped fresh parsley for a bit of color and freshness. Serve warm great on toast, alongside grilled meats, tossed through pasta, or simply as a flavorful side.
