Equipment

Ingredients
  

  • ½ cup bitter gourd karela, peeled and chopped
  • ½ cup filtered water
  • ½ lemon freshly squeezed
  • 1 small piece fresh ginger ½ inch
  • A pinch of black pepper
  • A pinch of salt optional, to balance bitterness
  • 4 –5 fresh mint leaves
  • 1 small handful fresh coriander cilantro leaves
  • 1 tsp honey jaggery syrup, or apple juice (optional, to reduce bitterness)

Instructions
 

Get Your Ingredients Ready:

  • Start by washing the bitter gourd thoroughly. Peel it, and if the seeds are big or tough, take them out. Then chop the bitter gourd into small pieces. Peel and slice the ginger, and give the mint and coriander leaves a good rinse.

Optional Step To Cut Down Bitterness:

  • If you want to tone down the bitterness, soak the chopped bitter gourd in salted water for about 10 to 15 minutes. After soaking, rinse it well.

Blend Everything Together:

  • Put the bitter gourd, ginger, mint, coriander, lemon juice, black pepper, salt (if you’re using it), and some water into a blender. Blend until you get a smooth mix.

Add Some Sweetness (If You Like):

  • If you want your juice a bit sweeter, throw in a teaspoon of honey, jaggery syrup, or even a splash of apple juice. Blend again just to mix it all in.

Strain For Smoothness (Optional):

  • If you prefer your juice smooth, strain the mixture through a fine sieve or muslin cloth. But if you don’t mind a bit of texture and want the extra fiber, you can skip this step.

Enjoy Fresh:

  • Pour the juice into a glass and drink it right away. For best results, have it first thing in the morning on an empty stomach.
